With a love of craftsmanship

The Plentz bakery and confectionery in Schwante, Brandenburg, is a family-run craft business with nine branches and 170 employees that focuses on regionality, social responsibility and genuine craftsmanship. Since 2002, Plentz has even been growing its own grain, including the historic Champagne rye variety, to secure high-quality raw materials for its baked goods. Night after night, both classic and innovative products are created in the bakeries with a great deal of time and craftsmanship. On Fridays and Saturdays, farmhouse breads, herb breads and crumble cakes are baked in a traditional wood-fired oven.

The bakery fosters close ties with the local community – whether through festivals, collaborations with associations or simply by listening to the neighbourhood. It cultivates Christian social values, which are reflected in its dealings with both customers and employees. Plentz stands for living tradition, passion and values that make a difference.

‘A machine that suits us’

When the old bread roll machine reached its limits, the Plentz bakery and pastry shop sought a new solution that would perfectly match the size of the business and its requirements – compact and flexible, not oversized, but powerful enough for up to 10,000 bread rolls per day and with room for future growth. The decision was made in favour of the Eco Twin from Koenig. The decisive factors were its ease of use – even an employee with a health disability could operate the machine without any problems – its uncomplicated cleaning and conversion, and the guaranteed after-sales service, combined with a balanced price-performance ratio. The Eco Twin enables the efficient, programme-supported production of a wide variety of small baked goods, from wheat and sesame rolls to cheese rolls, crumble rolls and pancakes. Thanks to the new machine, Plentz was able to modernise its production processes without compromising on craftsmanship. The dough pieces are now placed in five rows, gently guided through a cooling curve and delivered to the branches.

When we looked into the issue, we soon realised how complex it was. It's not just about a machine, but about a process that involves new refrigeration technology and new procedures.
