Twin Twist Mixer

Step Proofing Cabinet

The modular structure of the step proofing cabinet facilitates gentle and even processing of the dough pieces. Its compact and hygienic design and the use of high-quality components ensure maximum efficiency and flexibility in production, and all of this with a reduced need for space. The proofing cabinet is completely enclosed by heat-insulating plates. Nevertheless, all of the mechanical components are fully compartmentalised and thus easily accessible for maintenance work.

Overview

The climate control unit facilitates extremely precise control of all proofing parameters (temperature and humidity) and ensures the maintenance of uniform and constant proofing conditions in all areas of the proofing cabinet.

Plate Conveyor System

The plate conveyor system takes plates and transports them cyclically to all of the units as part of the line, starting at dough preparation, where the plates are loaded, through to unloading and return conveyance.

Product Cutting Unit

The product cutting unit cuts the dough using rotating knives. Before cutting, the product's position is checked using a scanner. Possible cutting adjustments: Number, angle, depth, inclination.

Puffer

Buffer

- Buffering of empty plates depending on how many plates are not in the proofing cabinet - If the line is paused, for example, during a change of product, the empty plates are buffered depending on how long the line is out of operation The plates are moved within the buffer using a chain lifting system.

Plate Cleaning Unit

The plate cleaning unit dries, cleans and sterilises the plates.

The cleaning unit consists of the following components:

    This PLC-controlled unit is located on the sheet return conveyor unit and consists of a rotating plastic brush to clean the surfaces of the plates and a collection draw.
  • Sterilisation Unit
    This PLC-controlled unit is located on the plate return conveyor unit and consists of UV lamps to prevent soiling.

The indirectly heated MDI STRATOS multi-level tunnel oven is an extraordinary combination of compact design, modularity, performance and control. The independent levels allow for the baking of different quantities and products.

Spiral cooler

With its continuous conveyor belt system, the spiral cooler facilitates a natural and consistent cooling of products prior to subsequent units, for example, before cutting, freezing and packing. In addition to its high capacity and small space requirements, this cooler is characterised by considerable flexibility. This is primarily due to the simple adjustment options for the product throughput time inside the unit.

The spiral freezer is a continuous freezing system that helps products reach the optimum core temperature for preservation with a special focus on hygiene and efficiency requirements. The freezer is fully coated with thermal-insulation plates and its internal conditions are regulated by several vaporisers. In addition to its high capacity and low space requirements, this freezer is characterised by considerable flexibility thanks to the simple adjustment of the product throughput time inside the unit.
